Ingredients

vegetable oil

laksa paste
2 x 400ml cans
coconut milk

lime juice

vermicelli noodles, cooked and drained

Description
A spicy soup.
Instructions
Heat a large pan over medium heat. Add the oil and laksa paste and cook for 1 minute. Add the coconut milk, water, lime juice and chilli. Bring to the boil. Add the sweet potatoes, reduce the heat, and simmer for about 15 minutes. Add the bok choy and snow peas and cook for a further 5 minutes or until the sweet potato and bok choy are tender. Divide the noodles among the 4 bowls, spoon over the laksa, and top with the bean sprouts and coriander leaves. Serve hot.
Notes
You can vary this by adding chicken or other meat. Brown the meat before adding to the soup.
