Description
These 'ranch-style' eggs are a great weekend breakfast dish.
Instructions
Cook the onion, garlic, and capsicum gently in half the oil in a frying pan. Add the tomatoes and simmer until thickened. Season with salt, pepper and tabasco sauce, and stir in the coriander or the cumin. Make 4 depressions in the sauce with a spoon and break an egg into each one. Cover and cook until the eggs are set - 3 to 4 minutes. Meantime, heat the remaining oil and fry the tortillas for about 30 seconds on each side, or until they are crispy. Place the tortillas on 2 plates. With an egg lifter, lift an egg with its surrounding sauce onto each tortilla. Serve at once.
Notes
If this was not a vegetarian recipe, you could put crispy bacon on the top of the eggs.
