Marinated Steamed Salmon

Tasmanian Atlantic Salmon fillets
60ml
soy sauce
1 tsp
ginger
1 tbsp
lemon or lime juice

chilli
1/2 tsp

Instructions
Put the salmon into a bowl and cover with the soy sauce, coriander, ginger, juice, and chilli. Put into the fridge to marinate for at least 1 hour, turning a couple of times. Put the leeks in the bottom of a steamer. Put the salmon on top. Put the lid on the steamer and steam for about 10 minutes over boiling water. Serve on a bed of the Rainbow Salad, and put the leeks on the top.
Notes
A delicious light meal for summer. Buy the best pieces of salmon that you can find. Rainbow Salad is julienne of carrot, beetroot, and broccoli hearts/stems.
