Beef, Tomato & Red Wine Casserole

Instructions
Combine the flour and paprika, then toss the beef in the mixture to coat. Heat a large casserole or pan and brown the meat well. Set the meat aside. Cook the onion and garlic until softened. Add the tomatoes and the red wine, stirring to mix well. Bring to the boil, and then add the meat, again stirring well to combine. Reduce the heat to a gentle simmer, cover, and cook for about 45 minutes or until the meat is tender. Meanwhile, place the potatoes into a saucepan and cover with water. Bring to the boil, then reduce the heat and simmer until the potatoes are tender. Drain well. Add butter/margarine and milk and then mash until as smooth as you like it. Serve the meat with the mashed potato alongside. Sprinkle with parsley.
