Chicken & Pumpkin Stri-Fry
Ingredients

butternut pumpkin, diced

sweet chilli sauce
2 tbsp
rice wine vinegar
1 tbsp
brown sugar
1/4 tsp
coriander, dried leaves

Instructions
Cook the diced pumpkin in boiling water until just softened. Drain and set aside. Heat a wok or deep frying pan. Add the chicken and olive oil and stir-fry for 3-4 minutes. Set aside. Reheat the frying pan and add the garlic and ginger and let cook for 1 minute. Add the vegetables and stir-fry for 1 minute. Add the cooked chicken, hoisin sauce, sweet chilli sauce, vinegar, and brown sugar. Add the pumpkin and mix everything gently - the diced pumpkin might break up into mush if you are not gentle. Bring to the boil and cook for 2-3 minutes. Stir in the coriander. Serve in bowls over the steamed rice.
Notes
You can use another vinegar instead of the rice wine vinegar. I cooked a diced onion with the chicken.
