  • 1 tsp olive oil
  • 1 tbsp ginger
  • 2 cloves garlic
  • 1/4 cup hoisin sauce
  • 1/4 cup sweet chilli sauce
  • 2 tbsp rice wine vinegar
  • 1 tbsp brown sugar
  • 1/4 tsp coriander, dried leaves
  • 2 serves steamed rice

InstructionsInstructions  Cook the diced pumpkin in boiling water until just softened. Drain and set aside. Heat a wok or deep frying pan. Add the chicken and olive oil and stir-fry for 3-4 minutes. Set aside. Reheat the frying pan and add the garlic and ginger and let cook for 1 minute. Add the vegetables and stir-fry for 1 minute. Add the cooked chicken, hoisin sauce, sweet chilli sauce, vinegar, and brown sugar. Add the pumpkin and mix everything gently - the diced pumpkin might break up into mush if you are not gentle. Bring to the boil and cook for 2-3 minutes. Stir in the coriander. Serve in bowls over the steamed rice.
NotesNotes  You can use another vinegar instead of the rice wine vinegar. I cooked a diced onion with the chicken.
