Spaghetti with Prawns, Tomato, Garlic & Parsley

fresh spaghetti, dried
2 tsp
olive oil

garlic cloves, crushed

chillis, deseeded, finely chopped

green prawns, peeled and deveined, with tails intact

egg tomatoes, deseeded, finely chopped

dry white wine

continental parsley, chopped

Description
A light, simple, summer dish that is easy to make.
Instructions
Cook the pasta in a large saucepan of salted boiling water, following the packet instructions until al dente. Drain. Meanwhile, heat the oil in a frying pan over a medium-high heat. Add the garlic and chillis and cook, stirring, for about 30 seconds or until aromatic. Add the prawns and cook for 2-3 minutes or until they curl and change colour. Add the tomato and cook, stirring, for 1 minute or until tender. Add the wine and bring to the boil. Cook, stirring, for 5 minutes or until the sauce is reduced by half. Add the pasta and parsley and toss to coat. Season with salt and pepper.
Notes
We drank a White Shiraz with this dish - a light, summer wine.
