  • 2 chillis, deseeded, finely chopped
  • 400gm green prawns, peeled and deveined, with tails intact
  • 4 egg tomatoes, deseeded, finely chopped
  • 1/3 cup dry white wine
  • 1/4 cup continental parsley, chopped

DescriptionDescription  A light, simple, summer dish that is easy to make.
InstructionsInstructions  Cook the pasta in a large saucepan of salted boiling water, following the packet instructions until al dente. Drain. Meanwhile, heat the oil in a frying pan over a medium-high heat. Add the garlic and chillis and cook, stirring, for about 30 seconds or until aromatic. Add the prawns and cook for 2-3 minutes or until they curl and change colour. Add the tomato and cook, stirring, for 1 minute or until tender. Add the wine and bring to the boil. Cook, stirring, for 5 minutes or until the sauce is reduced by half. Add the pasta and parsley and toss to coat. Season with salt and pepper.
NotesNotes  We drank a White Shiraz with this dish - a light, summer wine.
